RECIPE: Minty Pea Avocado Dip

3 cups of frozen peas

½ avocado

1 garlic clove

Juice of 1 lemon

Fresh mint leaves

Salt and freshly ground pepper to taste


  1. Cook the peas in boiling water or the microwave until soft (2 minutes)
  2. In a blender or food processor, add the cloves of garlic and blend for a few seconds.
  3. Add the peas when they are done cooking along with the other ingredients and blend well, until the dip is smooth.
  4. Serve the hummus on cut cucumber circles, with sliced green, red or yellow bell peppers or with your favorite crudité vegetable.
