Looking for a healthy snack that you can make in less than five minutes? Check out this heart-healthy recipe for minty pea avocado dip!
3 cups of frozen peas
1 garlic clove
Juice of 1 lemon
Fresh mint leaves
Salt and freshly ground pepper to taste
- Cook the peas in boiling water or the microwave until soft (2 minutes)
- In a blender or food processor, add the cloves of garlic and blend for a few seconds.
- Add the peas when they are done cooking along with the other ingredients and blend well, until the dip is smooth.
- Serve the hummus on cut cucumber circles, with sliced green, red or yellow bell peppers or with your favorite crudité vegetable.
