It’s that time of year where everything turns green to celebrate St. Patrick’s Day!
You don’t need to give up eating healthy to get in on the fun – try out this healthy version of a Shamrock Shake to get you in the festive mood!
This recipe makes 4 servings (serving size 6 oz)
1 cup baby spinach
1 ripe banana
1 cup low fat vanilla Greek yogurt
¼ teaspoon mint extract
1 cup vanilla almond or soy milk
- Place all ingredients into a blender in the order as listed and blend until smooth
- Pour into a glass and garnish with a mint leaf to serve.
