Our healthy coconut barfi is a delightful treat that combines the rich flavors of coconut, nuts, and jaggery, without the guilt of excess sugar or additives. With just a few simple ingredients and minimal effort, you can whip up this delightful Diwali delicacy.

Ingredients
- 1 tbsp ghee
- 2 1/4 cups desiccated coconut
- 2 tbsp powdered pistachios
- 2 tbsp powdered cashews
- 1 cup organic jaggery powder
- 1 tsp cardamom powder
- Cashew pieces for garnishing (optional)
Preparation
- Roasting the coconut:
- Begin by heating 1 Tbsp of ghee in a pan over low heat.
- Add 2 1/4 cups of desiccated coconut to the pan and roast it for 3-5 minutes. As you roast, you'll notice the aroma of roasted coconut becoming stronger. This step is crucial as it enhances the flavor of your barfi.
- Add nuts and spices:
- Next, add 1 tsp of cardamom powder mixed with 2 tbsp of powdered pistachios and 2 tbsp of powdered cashews to the roasted coconut. Mix well for 2-3 minutes to incorporate these delightful flavors and create a fragrant, nutty base.
- Caramelize the jaggery:
- Now, add 1 cup of organic jaggery powder to the mixture. Continue to stir and mix for about 6-8 minutes until the jaggery completely caramelizes and the mixture becomes sticky and moldable. This is when the magic happens, and your barfi begins to take shape.
- Transfer and shape:
- Turn off the stove and transfer the sweet-smelling mixture to a container of your choice. To prevent sticking, you can use butter paper or lightly grease the container with ghee before spreading the mixture.
- Garnish and set:
- Press the mixture into the container to create an even surface. It will take the shape of the container, so you can make it as thick or thin as you prefer.
- For an added touch of elegance and flavor, consider sprinkling some cashew pieces (or any nuts of your choice) on top as a garnish. This step is optional but adds a lovely crunch and visual appeal.
- Refrigerate and cut:
- Pop the container into the refrigerator for 1-2 hours to allow your barfi to set and firm up. This refrigeration time helps it maintain its shape and makes it easier to cut into square-shaped pieces.
- After refrigeration, carefully cut your healthy coconut barfi into bite-sized squares.
