

These flavorful gluten free cookies are mildly sweet and contain a nourishing mix of protein, healthy fat and fiber; a terrific way to greet the day!
Including prep and cooking time, you can enjoy this tasty treat in about an hour. To enjoy the cookies at a later time, they may also be frozen.
Ingredients
1 1/2 cups quick cooking oats
1 cup almond flour
1 tsp baking powder
1 tsp ground cinnamon
3/4 tsp kosher salt
1/4 tsp nutmeg
1/2 tsp ground ginger
1 large egg plus 1 egg white, whisked
1/2 cup neutral oil, such as canola or safflower
1/3 cup maple syrup
1 1/2 tsp vanilla extract
1 1/2 cups freshly grated carrots (about 4 medium)
1/2 cup walnuts chopped
1 Tbsp ground flax meal
Prep time: 20 minutes
Total time: 50 minutes
Yield 12 cookies
Preparation
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Whisk oats, almond flour, baking powder, cinnamon, salt, nutmeg and ginger in a large bowl.
- Making a well in the center of the dry mixture, add the whisked egg and egg white, oil, syrup, vanilla and whisk well. Stir in carrots, walnuts and flax meal. Mix well.
- Portion mix by 1/4 cupfuls, making approximately 12 balls. Arrange 1 inch apart on the baking sheet, and press to flatten slightly.
- Bake until cookies are golden and tops are slightly cracked about 30 minutes. Cool on baking sheet to set, about 20 minutes.
