

The JTCC dietitians served up fun healthy treats in the Culinary Medicine Studio with lots of protein to keep up your energy for trick or treating ! Happy Halloween!
Pumpkin Deviled Eggs
Ingredients:
- 6 eggs
- 2 tablespoons mayonnaise
- 2 tablespoons Greek yogurt
- ¼ teaspoons dijon mustard
- ½ teaspoon onion powder
- Salt and pepper to taste
- 2 green onions thinly sliced
Instructions:
- Bring eggs to a boil over medium heat. Once the water reaches boiling, reduce heat and cover eggs. Let cook for 9-12 minutes.
- Once the eggs are cooked, place in a large ice bath. Gently peel off the shells once cooled.
- Cut eggs lengthwise in half and separate yolks and whites.
- Mash egg yolks with a fork and add mayonnaise, greek yogurt, dijon mustard, onion powder, salt and pepper. Mix until smooth and creamy.
- Spoon or pipe egg yolk mixture into egg white halves. Create a rounded shape resembling a pumpkin.
- Place sliced green onion on each egg to create a pumpkin stem
- Add to a cheese board with veggies and whole wheat crackers and enjoy a healthy halloween treat!
