Recipe: Deconstructed Stuffed Peppers

Tap into the power of the pepper with this simple, one-pan recipe. Peppers are an excellent source of vitamins and minerals, and they support energy, brain function and metabolism.

Ingredients:

  • 2 Tbsp olive oil
  • 1 lb ground turkey, ground chicken or ground beef
  • 1/2 onion, chopped
  • 2 bell peppers (any color), chopped into 1-inch pieces
  • 2 garlic cloves, minced
  • 1 cup cooked rice (white or brown)
  • 2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1 tsp sea salt
  • red pepper flakes, to taste
  • 1 24-oz jar marinara sauce
  • 1 cup shredded cheese


Instructions:

  1. Heat 1 Tbsp olive oil in a large skillet over medium heat.
  2. Add ground turkey, and brown for five to seven minutes until mostly cooked through. Remove from the pan and set aside. Remove excess fat from the pan.
  3. Add 1 Tbsp of olive oil to the hot pan. Add diced bell pepper, diced onion and garlic. Saute until tender.
  4. Add in the cooked rice along with the Italian seasoning, black pepper, salt and red pepper flakes.
  5. Saute until the rice begins to soften, then add the ground beef back into the pan.
  6. Pour in the jar of marinara sauce, stir to combine, and simmer for 10-15 minutes, stirring occasionally.
  7. Add cheese on top, and cover for a few minutes to let the cheese melt.
