Ingredients:

For the salad:

  • 2 cups of cooked quinoa

  • 1 cup of carrots, shredded
  • 1/4 cup of green onion tops, diced
  • 1/2 cup of unsalted, roasted peanuts

For the ginger dressing:

  • 6 tablespoons of extra virgin olive oil
  • 2 tablespoons of toasted sesame oil
  • 6 tablespoons of rice vinegar
  • 1/4 cup of rice vinegar
  • 2 teaspoons of garlic powder
  • 2 teaspoons of fresh grated ginger

Preparation:

  1. Cook the quinoa: Start by preparing the quinoa according to the instructions on the package. Once cooked, set it aside in the pot.
  2. Prepare the edamame: Steam or boil the edamame until tender. Drain and set aside to cool.
  3. Chop the vegetables: Dice the cucumber and celery, shred the red cabbage and carrots, and finely dice the green onion tops.
  4. Combine ingredients: In a large mixing bowl, combine the cooked quinoa, steamed edamame, diced cucumber, celery, shredded red cabbage, shredded carrots, and diced green onion tops.
  5. Add peanuts: Gently fold in the roasted peanuts to add a delightful crunch to your salad.
  6. Prepare the ginger dressing: In a separate bowl, whisk together the extra virgin olive oil, toasted sesame oil, rice vinegar, garlic powder, and grated ginger until well combined.
  7. Dress the salad: Pour the ginger dressing over the salad and toss everything together until the dressing coats the ingredients evenly.
