Recipe: Deconstructed Stuffed Peppers

Tap into the power of the pepper with this simple, one-pan recipe. Peppers are an excellent source of vitamins and minerals, and they support energy, brain function and metabolism.
Ingredients:
- 2 Tbsp olive oil
- 1 lb ground turkey, ground chicken or ground beef
- 1/2 onion, chopped
- 2 bell peppers (any color), chopped into 1-inch pieces
- 2 garlic cloves, minced
- 1 cup cooked rice (white or brown)
- 2 tsp Italian seasoning
- 1/2 tsp black pepper
- 1 tsp sea salt
- red pepper flakes, to taste
- 1 24-oz jar marinara sauce
- 1 cup shredded cheese
Instructions:
- Heat 1 Tbsp olive oil in a large skillet over medium heat.
- Add ground turkey, and brown for five to seven minutes until mostly cooked through. Remove from the pan and set aside. Remove excess fat from the pan.
- Add 1 Tbsp of olive oil to the hot pan. Add diced bell pepper, diced onion and garlic. Saute until tender.
- Add in the cooked rice along with the Italian seasoning, black pepper, salt and red pepper flakes.
- Saute until the rice begins to soften, then add the ground beef back into the pan.
- Pour in the jar of marinara sauce, stir to combine, and simmer for 10-15 minutes, stirring occasionally.
- Add cheese on top, and cover for a few minutes to let the cheese melt.
